Ingredients
- 2 1/2 ponds of potatoes
- 1 package (10 ounces) frozen peas, optional
- 1 cup finely chopped celery (from 1 to 2 ribs)
- 1/2 a cup of scallions, both white and light green parts (from 4 scallions)
- 1 package of Good Seasonings Italian salad dressing mix
- 1/3 cup of olive oil
- Remove any dirt from the potatoes. Cut larger potatoes into eights. Cut smaller potatoes into quarters. Place the potatoes into a 4-quart saucepan and cover them with cold water. Place the pan on high heat, cover it, and bring to a boil. When the water is boiling, reduce the heat to low and let the potatoes simmer, covered, until they are tender. Then drain the potatoes and let them cool for 10 minutes.
- meanwhile, place the frozen peas, celery, scallions, and salad dressing in a large serving bowl and stir to combine.
- When the potatoes are cool enough to handle (but still warm). Add the potatoes into the mixing bowl. Pour the olive oil and then stir. Then either put it into the fridge covered of course or serve it.
